Restaurateur Nikki Glekas shows how to make Greek salad and dressing.
The salad
4 medium Roma tomatoes, diced (10 oz)
1 cucumber, peeled and sliced
1/2 small red onion, thinly sliced, rinsed and drained
1 small green, sliced
3/4 cup kalamata olives, drained and sliced
4 oz. crumbled feta cheese (about 1 cup)
2 to 3 pepperoncini, chopped
The dressing
6 Tbsp olive oil
1 1/2 Tbsp fresh lemon juice
1 Tbsp red wine vinegar
Salt, pepper and oregano
For the Salad: Add all ingredients into a salad bowl
For the dressing: Mix all ingredients into a small mixing bowl, and pour over salad.
