Chef's Quick Tip: Homemade pasta
 
Ingredients: 
2 cups AP flour
1 Tbl EVOO 
1 Tble Kosher salt
3 eggs 
DIRECTIONS 
Combine EVOO, salt and eggs. Beat well
Put the flour and wet ingredients into a stand mixer, mix with a dough hook for 6-8 min or until dough forms a ball
Place in Saran Wrap in the refrigerator for 20 min
Cut to desired size 
In a large pot season with Kosher salt and only cook for 60 seconds, no more no less
Primavera - serves 6
3 carrots, peeled and cut into thin strips 
2 medium zucchini, cut into thin strips
2 medium yellow squash, cut into thin strips 
1 red, yellow and orange pepper, cut into thin strips
1 large onion, cut into thin strips
 1/4 cup EVOO
2 Tbl spoons herbs de Provence
Salt and pepper to taste 
 
Directions:
In a large mixing bowl combine all ingredients 
On a sheet tray, place all the ingredients flat and evenly 
Preheat oven to 375 degrees 
Bake for 8-10 min or until tender
