The Beeracks is home to Overshores Brewing in East Haven and a whole collective of beer creativity.

Founder Christian Amport runs his operation like a collective; more than 12 different brands craft their beers in his tanks and distribute them through the warehouse and taproom. He says that gives him the freedom to focus on his first love, Belgian Yeast, and the distinctive tang it lends to beer styles.

"It's like cooking something and you're gonna use a very specific herb in everything," Amport said. "If that's the dominant flavor, then you have to be thoughtful about what you're going to pair it with. So we do a lot of work tasting and taste tests, and doing side by side blind comparisons."
