Chef's Quick Tip: Chicken Tortilla Soup

This week Chef Inga Voloshin, a Registered Dietician from Grade A Cingari ShopRite shows Tina Redwine how to make Chicken Tortilla Soup.

Chicken Tortilla Soup
· 2 Tbsp Bowl & Basket avocado oil, or oil of your choice
· 1 yellow onion, diced
· 1/2 cup red bell pepper, ribs removed and chopped
· 4 garlic cloves, minced
· 3 tsp chili powder
· 1 1/2 tsp salt
· 2 chipotle peppers in adobo sauce, whole
· 1 (28-oz) can fire roasted tomatoes
· 32 oz Wholesome Pantry chicken stock
· 1 lb chicken breasts, left whole
· 6 corn tortillas, 4 ripped in half and 2 sliced into strips and baked
· 1 avocado, sliced
· 1/4 cup cilantro, washed and roughly chopped
· 1 lime, cut into wedges for garnish
