Sweet Potato Quinoa Summer Salad
Ingredients
4 Sweet Potatoes Peel & Dice Boil or Roast and Let Cool
1 Cup of Red Quinoa Rinse & Cook until Done and Let Cool
3 Hand Fulls of Baby Spinach
1 Cup Sunflower Seeds
1 Cup of Craisens
Combine ingredients in a bowl and toss with Dressing & Enjoy
Lemon Honey Vinaigrette
1/3 Cup Honey
1/4 Cup Lemon Juice
1/2 Cup Olive Oil
1/4 Cup Red Wine Vinager
1 Tsp of Salt
1 Tsp of Pepper
1/2 Tsp of Dijon Mustard
Mix Together
