Chef Justin, from The 'Port Restaurant in Westport, shares one of his best-selling salad dressings: champagne balsamic vinaigrette.
Recipe:
A standard ratio for a vinaigrette is 3:1 - oil : vinegar.
Remember this is a suggestion and modifications can be
made to your preference.
1. In the standing mixer combine all the ingredients
with the whisk attachment. Slowly add the oil to
emulsify. If it gets too thick add a few tsps of water to
loosen. Taste. Cool.
Ingredient           Amount
Champagne       Vin 2 C
Balsamic            Vin 2 C
Brown Sugar      1/4 C
Thyme, Dry        1 Tbsp
Mustard              1 Tbsp
Egg Yolk             2 ea
Blended Oil        48 oz
S/P                     TT
