Chef Tony, from Bar Zepoli's in Stamford, shares how to make one of his best-selling dishes, chicken scarpiello.
Ingredients
1 half of chicken -cut into 3 pieces
2 TB olive oil
Assorted sliced peppers
¼ cup Onions
Garlic 1 clove sliced
½ cup White wine
 ½ cup Chicken stock
3 oz Spicey sausage
1 plum tomato, quartered
Polenta-prepared
Instructions
Heat small roasting pan on stove top, add olive oil, heat until just starting to smoke.
Add seasoned chicken pcs, turning on all sides to brown.
Add garlic, cook until lightly browned, add remaining vegetables, stirring for 5 minutes.
Add white wine, chicken stock and tomato.
Cover with foil and finish cooking in 350 degree oven, about 30 minutes.
Served alongside prepared polenta, or your favorite rice
