Chef's Quick Tip: Hunter’s Beef with Greens

Hunter’s Beef with Greens
3 lbs. lean ground beef, preferably locally raised, grass fed
2lbs. broccoli, preferably organic
1 lb. kale, preferably organic
1 bunch parsley, preferably organic
1/3 pound soaked and finely ground red kidney beans
8oz white or shitake mushrooms
Dusting pulverized dried eggshells
Place the beef in the bottom of a crockpot. Put all other ingredients through a food processor to chop, then add to crockpot on top of the beef.
Cooking options:
1.) Put the lid on the crockpot and turn on high for 2 1/2 hours 2.) Put aluminum foil over crockpot (just the clay crock not the lid or metal cooker part) and cook in oven at 350 degrees for 1 hour. Mix together after cooked. Yield approximately 10 pints. Package as desired and freeze until ready to use. Thaw in the refrigerator.
