Chef's Quick Tip: Red wine vinaigrette

Chef Gerry, from The Gingerman Restaurant in Greenwich, shares how to make his favorite salad dressing: red wine vinaigrette.
Recipe:
3 tbl spoon of dijon mustard 
2 cups of red wine vinaigrette
1 cup of extra virgin olive oil
1 garlic clove minced 
1/2 teaspoon chopped parsley (Optional) 
Procedure:
Mix all ingredients in a bowl, except olive oil 
Add oil slowly while whisking to emulsify. (Also can be made in a blender puree all ingredients and add olive oil to thickened).
Red wine vinaigrette makes a delicious dressing for salads, lettuce wraps, sandwiches, and so much more.
