Chef's Quick Tip: Prime Filet Mignon

This week, Chef Kane Xu from Beach House Cafe in Greenwich shows Tina Redwine how to make Prime Filet Mignon. If you have any questions, please email tredwine@news12.com.

Prime Filet Mignon

Kosher salt 

Ground black pepper 

Soy sauce

In a hot pan with a touch of oil sear all sides of meat.  Do not cook through.  Once all sides of the filet is seared put it in the oven at 400 degrees - for medium rare - about filet mignon. 

Brandy peppercorn sauce: green pepper corn, touch of garlic, brandy, heavy cream

Add sauce to the hot pan after the filet mignon is removed, add salt and pepper, reduce
