Chef's Quick Tip: Prime Rib

This week, Tina Redwine shows us how to make a fool proof prime rib for your holiday dinner.

Perfect Prime Rib


1 prime rib roast 12lbs

4 oz evoo

1 tbsp each dried thyme, parsley, rosemary

6 oz chopped garlic

1 oz kosher salt

1 oz fresh cracked black pepper

 

Method

1. Combine all ingredients, and rub evenly over prime rib

2. Preheat oven to 500F

3. Place roast into oven, let sear for 20-30 min, seasoning rub and fat is crusty

4. Remove from oven, and lower heat to 350F

5. Let roast sit and rest for 20 min, to let juices equalize

6. Cover, return to oven, and cook to desired temperature, 120F rare, 125 med-rare, 130F med, 135 med-well, 140 well
