Trumbull man tries to redefine local coffee scene
A business owner in Trumbull says he runs one of the few certified organic coffee roasters in the state, and the only one in southwestern Connecticut.
Ed Freedman started the business, Shearwater Roasters, after decades in corporate IT.
He says he's trying to redefine the local coffee scene.
Sheerwater buys only organic beans and roasts them one variety at a time using precise times and temperatures.
And the attention to detail has customers coming back.
Shearwater says it offers about 15 varieties of coffee. You can find them at several local Whole Food stores, Fresh Markets, Balducci's and independent grocers, as well as many restaurants.
