Carroll’s Kitchen volunteers prep 15,000 meals ahead of Thanksgiving

Volunteers from Carroll’s Kitchen Long Island, including members of the Bellmore Kiwanis Club and the Massapequa Fire Department, are on a mission to serve 15,000 meals this year for seniors, veterans and those in need.
Ryan Carroll, of Carroll’s Kitchen, partnered with Long Island farms to make the event possible. The nonprofit organization formed when a group of hospitality workers lost their jobs during the COVID-19 pandemic.
“We're preparing 3,000 pounds of mushroom stuffing to go into 15,000 Thanksgiving dinners,” said Carroll.
Volunteers say they are up to meet the challenge to make thousands of meals, but more are welcome to join at the Massapequa Fire House through Tuesday to help prep food and deliver meals.
"It's important to give back to the community,” said Mike Mazzola, of the Massapequa Fire Department. “We penned a letter to the fire district. They were very emphatic about doing whatever they could. The members of this firehouse embraced the project.”
Carroll said Sunday's main task will be tackling a seemingly never-ending stack of potatoes.
“Its BYOP – bring your own peeler – for the mashed potato army,” he said.
