Caesar salad dressing
Ingredients
Caesar dressing ( yeild: 2 cups. )
Item volume
Anchovy fillets 6 each
Garlic clove 1 each
Kosher salt 1 teaspoon
Black pepper ½ teaspoon
Lemon juice 1 tablespoon
Red wine vinegar 1 tablespoon
Parmesan cheese ¼ cup
Dijon mustard 1 tablespoon
Egg yolk 2 each
Grapeseed oil
Evoo ¼ cup ea
Method:
Equipment: blender, measuring cups, measuring spoon set, blender, rubber spatula
1. Gather all the equipment and ingredients needed.
2. Sanitize your work space, start with clean and organized table and area.
3. In a blender, put in the anchovy, garlic, salt, pepper, lemon juice and vinegar. Blend on high for 30 seconds.
4. Add the egg and dijon and belnd on low for 30 seconds.
5. While the belnder is still blending on low, add the grapeseed oil in slowly until the dressing fully emulsifies.
6. Remove from the blender and enjoy as a salad dressing or as a dip with raw vegetables.
