Chef's Quick Tip: Salmon

Pan sear fish, skin on when appropriate
Flip and just continue cook for a quick moment until fish is just cooked
Remove fish from pan and add a touch of olive oil
Saute shallots, garlic & ginger
Add Citrus (all different or just one particular citrus)
Add butter and touch of water…
From this point you can add anything….soy….basil & tomato…anchovy & olives etc etc
Spoon the sauce over the pan and you have a simple dinner
