Chipotle 'Cream' (recipe to follow)
Spread the 'refried beans' on the romaine leaves and top with chipotle cream and avocado slices. Serve with chips & salsa.
'Refried Beans'
1c Sunflower Seeds, soaked
2T Sun-dried Tomato, soaked
1/2 Scallion
1/8c Cilantro
1/8t Salt
1/8c Olive Oil
Season to taste with Lemon, Cumin, Chili Powder, etc. Food Process all ingredients.
Chipotle 'Cream'
Mix Chipotle Powder to taste into mayonnaise, vegan mayonnaise, sour cream etc.
