This week, Chef Roe Chlala, the co-founder of Festivities Events, shows Tina Redwine how to make unique and fun summer treats. 
Watermelon cake
Ingredients:
1. One large oval watermelon
2. Strawberries, blueberries and mint to garnish
Method:
1. Place watermelon on its side
2. Cut off each end like you would a pumpkin top
3. Lay watermelon back on its bottom
4. Cut the watermelon in half
5. The watermelon will be cut into two size layers
6. If you have, use 2 sizes of cake pans as a template
To create the layer
7. Cut each layer into a circle
8. Prepare a “cake” presentation platter-
9. Place bottom layer of “cake” on presentation platter
10. Place the second layer on top
11. Garnish with mint and fruit around sides and down and on top of the cake
12. Optional- pieces of feta cheese as the “white” in red, white and blue for July 4th.
