Guacamole
Ripe Avocado, 36, 1 ea
White Onion, minced 1 tbs
Tomato, diced 1 tbs
Jalapeno Pepper, diced 1 tsp
Cilantro, minced 1 tbs
Salt, 1 tbs
Fresh Squeezed Lime Juice, 1 oz
Tomato, diced .5 tbs
Cilantro, diced 1 tbs
Warm Tortilla Chips, 1 pint
Toasted Pepitas, to garnish
Method:
Combine the onion, tomato, jalapeno and cilantro and salt. Macerate it, add in the avocado and lime juice. Mix completely, add in the garnish, re-season and top with the garnish.
