In today's quick tip, Chef Craig from New Haven shows Tina Redwine how to make crispy and gooey chocolate chip cookies.
INGREDIENTS
  • 1.83 cup of all-purpose flour
  • 0.625 tsp of baking soda
  • 0.75 tsp of baking powder
  • 0.75 tsp of salt
  • 0.25 lb of room temperature butter
  • 0.33 cup of brown sugar
  • 1/2 cup of sugar
  • 1  room temperature egg
  • 0..4 cups of chocolate chips
RECIPE
  • Add butter and both sugars into the stand mixer. All the butter and sugar should be light and whipped.
  • Whip on high speed until light and fluffy. Be sure to stop the mixer and scrape it down from time to time.
  • Add eggs to the mixer and let whip until light and fluffy again.
  • Add all dry ingredients. including chocolate chips,  and mix on the lowest setting right until fully incorporated
  • Scoop cookies out and pat into a patty about 1in. high
  • Preheat oven to 400 degrees and 375 degrees if it is a very high temperature oven
  • - Place cookies in oven for seven minutes
  • When seven minutes are up, remove cookies from the oven
  • While they are on the tray, drop the tray flat on your counter from about 1 foot above. The cookies will flatten when this is done multiple times.
  • Let the cookies cool at room temperature
