Deluxe Cake Mix Chocolate Chip Cookies

Ingredients:

1 box (20-ounce) Organic Vanilla cake mix

1/2 cup brown sugar

14 tablespoons unsalted butter, softened

1 egg

1/2 cup rolls oats, not quick cook

1/3 cup finely shredded coconut, unsweetened

1 cup highest quality semi-sweet chocolate chips

¼ teaspoon sea salt

Preparation:

Preheat oven to 350 degrees. 

In a bowl combine the cake mix, brown sugar, oats, coconut and salt. Add the butter, egg and chocolate chips and stir to combine. Refrigerate dough for 1 hour.

Drop cookie dough by the rounded spoonful on to non-stick cookie sheet.

Bake for 11-12 minutes until cookies are golden.
