This week, chef Nikki Glekas shows Tina Redwine how to make mini pumpkin pies.
Mini Pumpkin Pies
Ingredients
2 puff pastry sheets
2 tablespoons pumpkin puree
1 teaspoon pumpkin pie spice
2 teaspoons sugar
agave nectar
Mix pumpkin puree, spice, and sugar. Lay out pastry sheets, cut into round circles the side of a mason jar cap. Put a ½ teaspoon of pumpkin mixture in the center of the pastry round and fold over in half. Use a fork to score the dough together. Put on a nonstick baking sheet and brush tops with agave nectar. Bake in the oven at 350 degrees until golden brown.
