Chef Kashia, from MCK Gourmet, demonstrates how to make a quinoa salad.
Ingredients:
• 2 Cups of quinoa cooked as directed on the package
• 1 handful of fresh cilantro
• 1 medium red onion cut in small diced
• ½ sweet red peppers cut in small dice
• 3 tbsp of extra virgin olive oil
• 2 cups of diced and roasted sweet potatoes (skin off optional)
• 1 cup of orange segments
• Salt and pepper to taste
• 1 pack of store bought baby spinach
Directions:
In a medium bowl mix together the quinoa, onions, cilantro, olive oil and sweet peppers, season with salt and pepper; set aside. Place a bed of baby spinach on a dinner plate, place ¼ cup of quinoa mix in the middle of spinach, sprinkle ½ cup of diced sweet potatoes around the quinoa, add the orange segments over the quinoa.  Serve immediately.
Chef's Note: 
You can substitute:
•  Couscous for the quinoa
•  Add sautéed diced squash, zucchini and eggplant for added flavors
•  Replace Arugula or bib lettuce for spinach
