Chef's Quick Tip: Tuna Poke

This week, Robin Selden from Marcia Selden Catering shows Tina Redwine how to make savory holiday recipes. 
Tuna Poke

1 pound’s fresh tuna center
1 tablespoon toasted sesame seeds
1 cup Edamame
1 cup diced jicama
½ cup sliced scallions
1 Avocado
1-pound white rice (cooked)
Poke Sauce
1 cup soy sauce
1/4 cup chopped green onions
2 tablespoons sesame oil
½ cup rice wine vinegar
4 tablespoons sriracha

1 cup toasted Coconut Shards
Lotus Root, Plantain or Yucca Chips to Garnish
In a medium size bowl, combine all ingredients for the poke sauce and mix till
incorporated. Drizzle sauce over tuna and lightly toss to coat. Add in edamame, jicama,
scallions, sesame seeds. Serve over Rice. Garnish with Coconut, Yucca, Plantain or
Lotus Root Chips.
