Tuna Tartare
Ingredients 
5 oz. of tuna
1 oz. of shallots
1 oz. of cucumber
1 oz. of cilantro
½ oz. of soy sauce
½ oz. of sesame oil
1 avocado
Directions
First puree avocado, and set on side. Then mix all other ingridents in bowl and mix, take your mold and place tune tartar in then top it with avocado puree and add chips
