A Stamford empanada business in hoping to raise $10,000 to donate to Fairfield-based Save the Children's Ukraine relief fund.
Jackie Mendive, who owns Jackie's Empanadas on the Go says she moved to the United States from Argentina 20 years ago, taking her family, and her love of empanadas with her.
"I started my business in 2016. Initially it was a fundraiser for a charity I sponsored in Argentina. I did a months' worth of fundraising selling empanadas. And people kept calling me. In January of 2017, I started the business," Mendive says.
The kitchen is located in the Stamford Athletic Club building, but the business itself is all online.
Customers can order either fresh or frozen empanadas for pick up or delivery.
Since opening, Mendive has donated a portion of her profits to several local charities.
"Initially we were going to donate the profit of two days' worth of sales. But the response has already been great, so we're going to try to push it a little further. We're gonna donate 100% of all sales for these two days. So today is our second day."
