Aux Delices Holiday Dry Brine
½  cup kosher salt
½ cup sugar
2 tablespoons cracked black pepper
2 tablespoons fresh thyme leaves, chopped
2 tablespoons fresh rosemary leaves, chopped 
1 orange peel, cut into small pieces
Combine all ingredients.
