This week, Chef Frances Medina shows Tina Redwine how to make fried plantains. 

Fried Plantains
Ingredients: 
Green plantains
Garlic
Oil
Method: 
Remove the whole plantain out of the peel
Cut off the ends
Cut up plantain into one inch wide slices
Place them in about half an inch of oil and fry for about a minute and a half
Remove from oil onto a paper towel and flatten each piece to be about quarter of an inch thick
Place the flattened pieces back in the oil for another 60 seconds
Mince the garlic very finely and brush it onto the double fried plantains
