Ginger simple syrup
2 cups sugar
2 cups water
1/4 cup grated ginger
Use equal parts water and sugar and boil Grate ginger with a knife or microplane - until you have 1/4 cup Add to boiling water and sugar mixture and let steep for about 10 to 15 minutes depending on how strong you want the ginger flavor.
To steep you want to have the flame at a setting that produces a few small bubbles - not a lot.
Use for dressing, to drizzles on fish, meat or in cocktails or tea.
