Chef's Quick Tip: Tiramisu

Chef's Quick Tip: Tiramisu
Tony’s Tiramisu Serves 4-6
 
Ingredients 
32 oz Mascarpone
32 pc Lady Fingers
1 cup Granulated Sugar
2 ea Egg Yolks
2 cup Regular Drip Coffee
1 ea Espresso Shot
2 oz Frangelico
16 oz Dark Chocolate
1 Tbsp Cinnamon Powder
 
Directions
* Whisk together mascarpone, granulated sugar, and egg yolks until well combined
* In small bowl, combine drip coffee espresso shot and Frangelico
* Spread about a quarter of the mascarpone mixture across the bottom of a small casserole dish using a rubber spatula or pastry spatula.
* One by one, dip the lady fingers in the coffee mixture and line them up across the dish on top of the mascarpone.
* Once the dish is filled repeat the process with another layer of mascarpone and another layer of lady fingers.
* Using the rest of the mascarpone mixture top the final layer of lady fingers.
* Set the casserole in the refrigerator to rest for at least an hour.
* Meanwhile melt the dark chocolate in a double boiler (or cheat and use a microwave)
* Remove the tiramisu from the refrigerator and cut into squares any size you like. Using a spatula lift the squares out of the dish and onto the plates that they will be served on.
* Garnish with a shake of cinnamon powder and using a spoon, drizzle the dark chocolate on top of the tiramisu.
* You can also garnish with berries, powdered sugar, and mint leaves if you’d like
