This week, Chef Michael Burbella of Karvouna Restaurant Catering shows Tina Redwine how to make vegetarian roasted chickpea gyros.
Vegetarian roasted chickpea gyros
1 can cooked chickpeas drain and rinsed
1 tablespoon extra virgin olive oil
1 tablespoon paprika
1 tablespoon ground cumin
1 teaspoon ground black pepper
1/2 teaspoon cayanne pepper
1/4 teaspoon salt
Whole wheat pita
1/4 cup prepared tzatziki
1/4 red onion sliced thin
1/4 cup cherry tomatoes sliced in 1/2
Few romain lettuce leaves sliced 1/3 inch thick
Method:
Preheat oven to 400 degrees. Pat dry chickpeas and toss with olive oil, paprika, cumin, cayanne
pepper, salt & pepper. Spread chickpeas onto a non stick pan and roast about 20 minutes until
lightly browned.
Warm the pita and spead one side with the prepared tzatziki. Add about 1/3 cup of roasted
chickpeas. Top with cut lettuce, cherry tomatoes and onion. Fold in half and wrap parchment
paper 2/3 of the way up.
