This week, Chrissy Tracey from Bon Appetit shows Tina Redwine how to make Apple Cinnamon Muffins. 
Apple Cinnamon Muffins
Ingredients:
For the batter
• 2 cups all purpose flour
• 1/2 tsp salt
• 1 1/2 tsp baking powder
• 2 tsp ground cinnamon + more for coating the apples
• 2 small apples, diced and cored
• 1 cup sugar
• 1 stick of butter at room temperature
• 2 flax eggs (2 tbsp flax seed meal + 6 tbsp water)
• 2 tsp vanilla extract
• 1/2 cup almond milk
For the topping
• 1/2 cup butter, melted
• 1/4 cup sugar, granulated preferred
• 1/4 cup ground cinnamon
Directions:
1. Pre-heat oven to 375. Spray muffin tins with bakers spray or fill with cupcake liners for easy
cleanup.
2. Prepare your flax egg by combining flax meal and water in a small bowl. Set aside.
3. Sift together 2 cups flour, baking powder, salt, and cinnamon in a large bowl.
4. Dice your apples, avoiding the core and place in a small bowl. Coat with flour, cinnamon
and sugar and toss gently to combine. Set aside.
5. In a large mixing bowl or using a stand mixer, cream together butter and sugar for a few
minutes until well combined. Add your flax egg and combine for another minute and then
mix in the vanilla.
6. Add in your flour mixture, alternating with your almond milk, and continue to stir until
combined and smooth. Fold in your apples to the mixture.
7. Pour into muffin tins, filling about 2/3 of the way full.
8. Place muffins in the oven to bake for about 30 minutes.
9. While your muffins are baking, prepare topping by combining sugar and cinnamon in a
small bowl, and setting aside melted butter in another small bowl.
10. When muffins are done, brush the tops with the melted butter and then dip them into the
cinnamon sugar mixture. Place on a plate to finish cooling. Enjoy.
