Chef's Quick Tip: Avocado Toast
This week, Nikki Glekas of Nikki’s Modern Mediterranean, shows Tina Redwine how to make avocado toast.
Avocado Toast with Fried Egg
Makes 2 slices
2 slices white bread
2 tablespoons butter
2 ounces crumbled feta
Toast the slices of bread and place them on a plate. Cut the avocado in half and divide it evenly between the two slices of bread.
Add the butter to a small skillet and turn the heat to medium-high. When the butter starts to bubble add the eggs to the skillet and cook them to desired consistency.
Place a fried egg on top of each avocado toast. Scatter 1 ounce of the crumbled feta on top of each egg.
