Chef's Quick Tip: Chicken Skewers
This week, chef Joshua Smith from Alltown Fresh, shows Tina Redwine how to make Chicken Skewers.
1# Chicken Thighs (Boneless)
2 Tbls Shabazi
1 Cup Whole Fat Yogurt
2 Each Lemons
1 Cucumber (Hot House Preferred)
1 Clove Garlic, Grated
2 Tbls Chopped Mint
1. Stir together the yogurt, cucumber, garlic, lemon juice and chopped Mint in a medium bowl. Season with the salt and pepper. Taste and adjust the seasonings. Before serving, garnish with more Fresh Mint
2. Dice Chicken in to 2” Pieces and toss with Grapeseed Oil, Shabazi, and Salt. Skewer the Chicken and grill over Medium/High Heat for 2 minutes each side, then transfer to a rack on the grill or Oven at 300F until internal temperature reaches 155F.
3. Add Yogurt Sauce to base of plate and place grilled Chicken Skewers over it.
