  This week, Chef Casey Hallen of Casey H Bakes, shows Tina Redwine how to make chocolate cake. 

Chocolate Cake

Makes two 8" cakes

Ingredients:

    * 2 cups sugar
    * 1 3/4 cup flour
    * 1 cup dutch process cocoa powder
    * 1.5 tsp baking powder
    * 1.5 tsp baking soda
    * 1 tsp salt
    * 2 eggs
    * 1 cup milk
    * .5 cup veggie oil
    * 2 tsp vanilla extract
    * 1 cup boiling water (add a little bit of brewed coffee or espresso powder to boost the flavor of the chocolate cake. Add a lot to make a mocha cake!)
    * pans of your choice. 
    * non-stick spray
    * parchment paper

Instructions:

    1. Pre-heat oven to 350F
    2. Spray pans of your choice with non-stick spray and line with parchment paper. Tip: if you are look to bake quickly, use a rimmed cookie sheet to bake! This will only take 10-15 minutes to cook, will cool super fast, and then you can cut out fun shapes for mini-cakelets! 
    3. Mix all ingredients, except the boiling water and coffee, together in your stand mixer or by hand. Do not over mix. 
    4. Add in your boiling water.
    5. Mix until well combined
    6. Pour into pans and bake
    7. If using round 8" pans, this will take about 25-30min to bake. For rimmed cookie sheets, only about 10-15! You'll know the cake is done if you can press your fingertips on the top and get a little spring back.
