Puerto Vallarta Restaurants shows Tina Redwine how to make Churro pancakes.
Churro Pancakes1⁄2 tub Ricotta cheese
9 Eggs
6oz Melted butter
2 1⁄4 tbs Baking powder
3 cups Flour
3⁄4 cup Sugar
Method:
In a bowl mix baking powder, sugar, and flour in a separate bowl mix eggs, and butter.
Combine all together then add cheese and fold it until dissolved.
Scoop batter onto a 350-degree pre heated flat top or pan, cook for 2 minutes then flip.
Cook another side for 2 minutes.
Plate pancakes.
Top with fresh fruit and honey or agave.
