Chef's Quick Tip: Flaming Cocktail

This week, Chef  Spencer Wallack from RHK in Norwalk, shows Tina Redwine how to make a flaming cocktail.
Flaming Cocktail
¾ oz. Amaro
Campari
Lemon Juice
¾ oz. Bourbon
Rosemary Thyme Bunch
Pour ¾ oz. of Amaro slowly into the bottom of a 6 oz. Martini glass.  Then, using a bar spoon or tablespoon, slowly pour Campari onto the backside of a spoon in order to create separate layers of each ingredient.  Repeat this step with lemon juice, and lastly with Bourbon. 
Place rosemary thyme bunch over the rim of the glass.  Using a butane torch, light the surface of the drink on fire in addition to the garnish.  After the liquid catches flame, remove the butane torch.
Place a glass dome over the drink to achieve a smoky essence and trap the aroma.
