 This week, Chef Richard Chirol of Bowery Sweets shows Tina Redwine how to make an ice cream sandwich.   
Ice cream sandwich 
Instructions:
Cookies - coconut dacquoise (but you can use chocolate chip or other types of cookies)
5.25 oz egg whites
1 oz almond powder
2 oz sugar
 3.5 oz coconut powder
4.5 oz icing sugar
Homemade madagascar bean vanilla ice cream
Vanilla bean paste
25 oz milk
8 oz heavy cream
12 egg yolks
7 oz sugar
Vanilla bean paste
Chocolate coating
Tempered pure chocolate
