Chef's Quick Tip: Peach Lemonade
This week, Nikki Glekas of Nikki’s Modern Mediterranean, shows Tina Redwine how to make peach lemonade.
3 fresh peaches
5 fresh mint leaves, plus more for garnish
1 cup granulated sugar
4 cups water, divided
1 cup fresh lemon juice
- To make the peach simple syrup: slice the peaches and add to a saucepan with 2 cups of water and 1 cup of sugar and about 5 mint leaves. Bring to a low simmer until the sugar has dissolved and the peaches have cooled, about 15 minutes, then set aside and allow to cool.
- Add the peach simple syrup to the blender and puree until smooth.
- Place a fine mesh strainer over a pitcher and pour the puree over it. Allow all the peach liquid to drain into the pitcher. Add the lemon juice and remaining two cups of water. Stir well and serve over ice!
