Chef's Quick Tip: Tzatziki

This week, Chef Michael Burbella of Karvouna Restaurant Catering shows Tina Redwine how to make tzatziki.
Tzatziki
1 English cucumber
3 cloves garlic
Salt
2 cups fat free or 1% plain greek yogurt
1 lemon
Ground black pepper
2 table spoons olive oil
2 tablespoons choppede fresh dill
2 pieces whole wheat pita bread
Method:
Grate the cucumbers and place in a bowl, sprinkle with a little salt and let sit 15 minutes so that
liquid drains out.
Mince garlic add to yogurt. Zest lemon and add to yogurt with the juice, mix in dill.
Squeeze cucumbers in cloth to remove all excess water, add to yogurt, mix in olive oil.
Place a small mound on a plate and serve with whole wheat pita warmed pita breat cut into
