Kale, Apple and Walnut Salad
6 ounces massaged kale
1 tablespoon olive oil
1 cup diced crisp apples
1/2 cup toasted walnut pieces
1/2 cup crumbled feta cheese
2 tablespoons white Modena or other fruity white vinegar
Place the kale and apples in a medium mixing bowl and drizzle-over with the olive oil. Toss well until the kale and apples are evenly coated.
Add the walnut pieces and feta cheese, then drizzle over with the vinegar. Toss until well-combined and serve.
