On today’s Chef’s Quick Tip, Chef Craig from Olmo in New Haven gives us his take on a pesto schmear for appetizer dips and sandwich spreads.

Ingredients:

  • 1 bunch basil
  • 1 small bunch mint
  • 1 small bunch scallions (or wild onion)
  • 1/4 cup olive oil
  • 1/4 cup pecorino Romano
  • 1 tsp salt
  • 1 lb cream cheese - room temp

  Recipe:

  • In a food processor - mix all the ingredients except the cream cheese until a paste
  • In a stand mixer - add cream cheese with the paddle attachment and whip for 1 minute on high.
  • Turn the mixer off and wait for it to fully stop.
  • Using a rubber spatula, scrape down the sides of the bowl and add in the pesto. Whip for 1 more minute until fully incorporated.
Use this to schmear on your Olmo bagel loaded with veggies, a Ritz cracker with some smoked salmon, or as a crudités dip with market veggies.
