Fried pickles
Ingredients:
• High heat frying oil, such as vegetable, avocado oil, or sunflower oil
• Dill pickles
• Panko breadcrumbs, optional for added crispiness
For the Batter
• 1 cup all purpose flour
• 1 cup buttermilk (1 cup unsweetened almond milk + 1 tbsp vinegar or lemon juice)
• 1 tsp baking powder
• 1/2 tsp paprika, garlic powder, and greek seasoning or dill
• 1 tsp salt
• Dash of cayenne pepper (optional)
• For dipping: ranch, honey mustard, or any other sauce of choice
Directions:
1. Heat oil in a saucepan on high heat until it reaches about 350 degrees
2. Create your buttermilk mixture by combining your almond milk and vinegar in a bowl. Let sit
for a few minutes, then add the rest of your batter ingredients. Set aside.
3. Dab pickles dry with a paper towel. Slice pickles in half or in slices.
4. Dip each pickle slice into the wet batter, and then optionally into the bread crumbs, and
then fry in small batches, until golden.
5. Enjoy with dipping sauce of your choice!
