Chef's Quick Tip: Vegetarian Taco Salad in a jar

This week, Chef Robin Selden shows Tina Redwine how to prepare easy meals at home.
1 ½ T Sour Cream
1 T Mayonnaise
1 T Fresh Squeezed Lime Juice
1 T Sliced Scallions
¼ t Tajin Seasoning
½ t Fresh Ground Pepper
½ t Kosher Salt
¼ Cup Black Beans
¼ Cup Salsa
¼ Cup Cooked Rice
¼ Cup Shredded Mexican Blend Cheese
¼ Cup Corn
¼ Cup Shredded Lettuce
¼ Cup Diced Tomato
1 T Chopped Cilantro
Combine the dressing ingredients in a bowl, set aside.
In a Mason Jar begin layering the ingredients in the order listed beginning first with the
dressing, followed by the Black Beans, Salsa, Rice, Cheese, Corn, Lettuce, Tomato and topped
with the Cilantro. Place lid on the jar and refrigerate until ready to eat.
